Makefile: also unexport PKG_CONFIG_LIBDIR



Similar to how we do it for _PATH / _SYSROOT_DIR. Buildroot gets fairly
confused if the user has set up a custom PKG_CONFIG_LIBDIR, so ensure
it gets unset.
